Produced from natural fermentations by koji spores which result in different ratios of 2-heptanone, 2-nonanone, and 2-undecanone. By varying the ratios of these ketones, natural blue cheese flavors can be created which mimic a wide variet of blue-type cheeses. Also used in small amounts to accentuate sharp cheddar notes.
